Amazing Buttermilk Biscuits

I found this recipe several years ago inThe Louie's Backyard Cookbook.  It makes the best biscuits I've ever eaten.  They are especially amazing warm, drizzled with honey. 

  • 2 cups flour
  • 4 tsps baking powder
  • ½ tsp salt
  • 2 tsp sugar
  • ½ tsp cream of tartar
  • ¼ tsp baking soda
  • ½ cup butter, cold and cut into ½ inch cubes
  • 3/4 cup buttermilk, more if needed and for glazing

Preheat oven to 400º.  Combine dry ingredients.  Add butter and cut into dry ingredients with a pastry cutter or a fork.  Cut butter until it resembles small peas.  Using a fork, stir in buttermilk.  Add more if needed.  Dough should be moist but not sticky.  Turn dough out on to a floured work surface.  Press dough into a 1" thickness.  Cut into 3" disks with a biscuit cutter.  Place biscuits on a baking sheet.  Reform scrap dough and cut more biscuits.  Brush biscuit tops with buttermilk before baking.  Bake for 12 minutes until golden brown.

Makes about 8 biscuits.
