Baked Apples with Granola and Dates

We made this dish in a Brunch class.   Sadly I forgot to serve them! My neighbors were very happy to help out, and they gave this dish rave reviews.  Lesson for the day: always check both ovens!

  • 6 apples, cored- use your favorite baking apple like Rome or Golden Delicious


  • 1/3 cup granola
  • 1/3 cup dates chopped
  • ¼ cup walnuts chopped
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 2 tsps lemon juice
  • 3 tbsps honey

Mix stuffing ingredients together. Divide stuffing between the apples, packing it into the cavity. Place apples in a baking dish.


  • 3 tbsps honey
  • ¾ cup apple juice
  • 3 tbsps butter melted

Stir together and pour mixture over stuffed apples. Cover with foil and bake at 350º for 30 minutes. Uncover and baste with syrup. Continue cooking and basting every 15 minutes until tender. Remove from oven and cool. Serve with a little cream if desired.

Serves 6.
