Hannah's Rotkohl

This recipe is from my friend Kirsten's mom Hannah, who was born in Germany.  It's a favorite in their family that even their kids like, and also was a favorite at the German class last month!

  • 2 ½ lbs red cabbage thinly sliced
  • 3 tablespoons butter
  • 1 onion diced
  • 10 whole cloves
  • 1 tablespoon soy sauce
  • 2 tablespoons lemon juice
  • 1 cup water, and more if needed
  • 2 tart apples grated
  • 1 teaspoon salt

Melt butter in a lidded sauté pan.  Add onion and sauté until onion is soft.  Add cabbage and cook for about 5 minutes, stirring to coat with butter.  Add remaining ingredients.  Bring to a simmer and cover.  Cook for 1 to 1 ½ hours.  Add water if needed.  Remove cloves before serving.

Serves 6 to 8.
