Parmesan Chicken Breasts

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh bread crumbs
  • ¼ cup Parmesan cheese
  • 4 green onions finely chopped
  • 1 teaspoon lemon zest
  • ¼ cup butter melted
  • Juice of ½ lemon
  • 2 tablespoons parsley minced
  • salt and pepper

Place washed and dried chicken breasts into a greased baking dish.  Season with salt and pepper. In a bowl or food processor mix bread crumbs, Parmesan cheese, onion, and zest together. Evenly top chicken with crumb mixture.  Drizzle with butter.  Bake at 400º for 20 minutes. Chicken should be at 165º internal temperature and crumbs will be browned and crisp.  Remove from oven.   Squeeze lemon juice over chicken and sprinkle with parsley to garnish.
