Vancouver has a new restaurant downtown, and we are encouraging everyone to go and taste Paul Klitsie’s wonderful food. This chef owns a successful restaurant in the Pearl (Fratelli), and we locals are very lucky that he decided to bless Vancouver with his second restaurant. Willem’s has an inviting, cozy atmosphere. I loved the repurposed seats from the Kiggins Theater. The night we visited we tried two salads- the Four B’s (butter lettuce, buttered croutons, buttermilk dressing and blue cheese) and the romaine, red onion, olives and toasted hazelnut bowl. Both were fresh and not overdressed. Mark had the Grilled Pork Loin with Cannellini beans, apple, bacon, and Brussels sprouts. He’s still talking about it. I had the Duck Confit with gnocchi in a grape sauce, but the chef was out of gnocchi so he whipped up some fresh fettuccini instead. It was the most amazing duck confit I‘ve ever eaten. I’m looking forward to trying it with the gnocchi!
