This cookbook is a lot more than casseroles. It has recipes from several ethnic regions, covers breakfast, lunch, dinner, side dishes and desserts, and meats to vegetarian. This book has only a few photos, but it contains 500 recipes, and I have several post-its in my copy for more recipes that I want to make.
Try: Chicken, Artichoke, and Mushroom Casserole on Polentaon page 177. The polenta cooks in the same pan as the chicken. It was amazing and very easy.
