Chef Kim's small-group gourmet cooking classes offer students an enjoyable, hands-on learning experience. A typical class includes approximately 2 hours of cooking, 4-5 recipes, and all the techniques, shortcuts, knife skills and food safety tips you need to be a success in the kitchen.

The line between the culinary arts and the fine arts is merely a suggestion for both Kim Mahan and Sue Clancy. Feeling free to color outside the lines of typical cookbook publications the authors decided to make a cookbook that is not a bound book of recipes, nor is it an art exhibit for display on commercial gallery walls. Instead it’s a set of playful, practical, artworks (greeting cards, tea towels, framed prints) you can use at home to cook, eat and share with people you love.

I love pasta of any kind but the Asian pasta dishes are special. Many use rice noodles, unusual spices and peanuts. We will be making 3 pasta dishes in this class each with very different flavor profiles.

While spending 3 weeks in Argentina we ate a lot of grilled meat and vegetables. As many of you know I do not have a BBQ at the cooking school so we will be using the broiler and cast iron grill pans.

If you have visited Turkey you know that all of there food is delightful. We tried many dishes that I had been cooking for years and discovered many new recipes. Its hard to decide what to cook in a class because we only have 2 hours, so these a just a few favorites.

What’s better than tacos on the patio in the summer with a cold beverage. Your guests can make there own the way they like. We will be making corn tortillas in this class, which is also a fun party activity. We are working on Winearitas if they’re good they will be introduced to the public at this class.
ABOUT THE CLASSES
Each class focuses on making a complete meal, or several dishes from a single category (such as all appetizers or all salads). A typical class includes 4 or 5 recipes and provides cooking techniques, shortcuts, knife skills and food safety. You will receive recipes for all dishes made in the class and ideas for pairings. Classes involve about 2 hours of cooking. When the meal is complete, students sit down in our beautiful Burnt Bridge Cellars dining room for a relaxed lunch or dinner of your culinary creations.
