Chef Kim's small-group gourmet cooking classes offer students an enjoyable, hands-on learning experience. A typical class includes approximately 2 hours of cooking, 4-5 recipes, and all the techniques, shortcuts, knife skills and food safety tips you need to be a success in the kitchen.

The line between the culinary arts and the fine arts is merely a suggestion for both Kim Mahan and Sue Clancy. Feeling free to color outside the lines of typical cookbook publications the authors decided to make a cookbook that is not a bound book of recipes, nor is it an art exhibit for display on commercial gallery walls. Instead it’s a set of playful, practical, artworks (greeting cards, tea towels, framed prints) you can use at home to cook, eat and share with people you love.

By popular demand I’m offering my Paella class more times. This is my traditional paella recipe made like we had it while living in Spain. Paella is like casserole once you have the technique you can make it your own with what you like.

This is the classic Moroccan dishes made in the tagine, the conical ceramic cooking vessel. We will be making preserved lemons for you to take home. Several of these dishes use preserved lemons, which have an amazing flavor and very different then just using lemons. These ceramic pots are easy to cook in and look impressive to serve at the table.

Mole is a very complicated Mexican sauce made with 29 ingredients, sounds impossible to make at home but if you have a food processor you can do it. The recipe makes a lot so it is perfect for freezing. The recipes that will accompany this menu will be simpler and we will be making corn tortillas to scoop up all the amazing sauce on your plate. This class is Gluten free.

I offer a different Holiday Dinner party class every year. This has been a very popular class for clients to discover new recipes to use for their special Holiday gatherings. This year I have created a French menu based around a duck dish I learned from the Chef I worked with in Barcelona.

ABOUT THE CLASSES
Each class focuses on making a complete meal, or several dishes from a single category (such as all appetizers or all salads). A typical class includes 4 or 5 recipes and provides cooking techniques, shortcuts, knife skills and food safety. You will receive recipes for all dishes made in the class and ideas for pairings. Classes involve about 2 hours of cooking. When the meal is complete, students sit down in our beautiful Burnt Bridge Cellars dining room for a relaxed lunch or dinner of your culinary creations.
